Just a few months ago we sealed our 11th batch of apple brandy and set it to rest in the barrel house. As years go by this crisp, clear spirit will take on the characteristics of it’s oak cask and transform into a warm well-rounded aged brandy. Luckily, with a growing appreciation of unaged spirits and a hint of impatience, we set aside a barrel of apple brandy to enjoy now. Our Tamworth Garden Eau De Vie is a sweet preview of what is yet to come from our barrel house. Distilled and fermented purely from local apple pomace, this Eau De Vie is truly a fresh picked taste of Autumn in New England.

Tamworth Garden Eau De Vie will do well to hold you over until our other aging batches transform into rich, complex brandies. This unique spirit is both crisp and warm, and lends a slight bite and sweetness to simple cocktails. We suggest treating it as you would any brandy or using it to build a Sweet Harvest cocktail by muddling seasonal fruits, sugar, citrus, and fragrant herbs.

We decided to celebrate our favorite fleeting autumnal fruit and mashed up a few ripe figs, but encourage you to experiment with whatever fruits you’d like.

Sweet Harvest

2 oz Eau De Vie

1/2 oz lemon juice

1/2 oz thyme simple syrup

1 fig, quartered

Muddle quartered fig & thyme simple syrup in a cocktail shaker. Fill shaker with ice. Pour in Eau De Vie and lemon juice. Shake vigorously and double strain into a chilled coupe glass. Garnish with a fresh sprig of thyme and a fig slice.

 

Von Humboldt’s Natur Wasser is crafted from our house-made neutral grain spirit, infused with tamarind, lemon zest and golden brown sugar. Inspired by author Andrea Wulf’s newly-released book, The Invention of Nature, this complex cordial is an ode to Alexander Von Humboldt’s travels through South America. During his travels, Von Humboldt discovered that the locals made a ‘lemonade’ from the Tamarind fruit, which turned unsavory water into a refreshing libation.

1.5 oz Von Humboldt’s Natur Wasser Tamarind Cordial
1.5 oz silver tequila
1/2 oz fresh lime juice
2 tbsp fresh orange juice

Rim the edge of a glass with kosher salt. Combine Von Humboldt’s Natur Wasser Tamarind Cordial, tequila, lime, and orange juice in a tumbler with ice. Shake vigorously & strain into a glass. Garnish with a lime twist.

Autumn has arrived, and like Robert Frost’s poem there’s two paths to take in the autumnal woods. Pumpkin “spice”, a mostly artificial blend of flavors whose tradition is barely fifty years old…or our Sweet Potato Vodka, based on a farm-to-bottle history of resourcefulness as old as America itself.

Personally, we prefer the latter. Which is why we’ve just released our second batch of Art in the Age Sweet Potato Vodka, a rich spirit infused with freshly cured New Hampshire sweet potatoes. The strong flavor of sweet potato is balanced by the natural vanilla and smokey bourbon flavors of toasted white oak, while allspice and maple syrup lend additional sweetness and herbal spice.
