Pascal’s Wager

To play it safe, or to play it sorry— that is the premise of one of the most famous arguments in philosophical theology, Pascal’s Wager. 15th century French mathematician and philosopher Blaise Pascal borrowed from the gambling hall for his argument, which states that since evidence alone cannot prove God’s existence, each person has two choices: to believe in God, or not to believe in God.

If one bets on God and wins, one wins the ultimate jackpot. If one bets on God and loses (or bets against God and wins, for that matter) they stand to lose very little. But if one bets against God and loses— well, there’s no coming back from that one.

Now, one sip of this whiskey has the potential to poke a hole in Pascal’s argument, given that the quality and taste is the ultimate evidence of God’s existence. And He wants you to be happy— so drink up!

In preparation for two special release barrels in the summer of 2022, we explored with some initial blending of the two. That is, a 50/50 split of the oldest bourbon released in New Hampshire (Old Man of the Mountain 7 Year Bottled-in-Bond) and a bourbon rested in used Cabernet wine barrels. It proved to be a wonderful medley, so we withheld a small portion of the hearts of each individual release (the best part of the barrel) to be blended as a rare addition to our whiskey program.

As far as its flavor profile goes, a bright berry fruity nose hangs over a sweet bready under layer. You can also expect the aroma of bread with a hints of apple butter and molasses. A drizzle of molasses and a touch of apple butter are present on the mid-palate and warm to a cinnamon heat on the finish.

MEET OUR FOUNDER

Steven Grasse

Steven Grasse is founder of Tamworth Distilling and Mercantile and the creative mind behind some of the most iconic spirits brands of the 21st century, including Hendrick’s Gin and Sailor Jerry Rum.

Steven launched Tamworth Distilling & Mercantile in 2015 in the heart of Tamworth Village, New Hampshire. Inspired by the transcendentalist history of the area, as well as its agricultural heritage, he set to work creating one of the most imaginative farm-to-bottle distilleries in the country.  Fueled by a passion for authenticity and innovation, he and his team experiment with local ingredients, foraged botanicals, and centuries-old techniques to craft spirits that are as inventive as they are rooted in place.

His “story-first” model of branding combines art, history, culture, and design, creating brand worlds people want to explore — and liquids interesting enough that they redefine categories.

Quaker City Mercantile

Steven is also the founder of Quaker City Mercantile, a Philadelphia-based creative agency known for building some of the most distinctive alcohol brands in the world. Through Quaker City, he’s developed campaigns and products for global companies while continuing to create his own experimental brands — including Art in the Age Spirits, based in Pennsylvania, and The Pathfinder, a non-alcoholic amaro he co-owns.

Grasse's Legacy

In addition to his work in spirits and branding, Steven is a published author whose books blend cultural insight, history, and creativity. His titles include Brand Mysticism, Colonial Spirits, The Cocktail Workshop, Backcountry Cocktails, and The Evil Empire, among others.

Whether drawing from nature, history, or bold ideas, Steven Grasse continues to challenge convention and push the boundaries of what spirits — and storytelling — can be.
